LAMBERTI FOOD CMC - PRODUCT RANGE
Several CARBOCEL F food CMC grades have been developed to comply with specific customer requirements.
They differ in viscosity, degree of substitution and in particle size distribution.
VISCOSITY
CMC viscosity is very sensitive to: concentration, temperature and shear rate.
To optimise quality control CARBOCEL F are tested by using Brookfield
viscometer at two different concentrations in water while maintaining
fixed temperature (25°C) and spindle speed (30 rpm).
DEGREE OF SUBSTITUTION
Following the main legislation requirements for foodstuffs CARBOCEL F CMC are manufacture with standard substitution degrees between 0.7 and 0.95.

CODES
Any CARBOCEL F food grade CMC is coded with a number that is proportional to the viscosity of the product and letters which specify its particle size (see above).
Additional grades are available and bespoke products can also be developed to meet specific
requirements.
